We love grilling in the summertime. Our backyard backs to a large pond, where it is quiet and serene. We recently cooked up a batch of our homemade barbecue Sauce – Chipotle-Bacon-Bourbon Barbecue Sauce – and decided lobster should be on the menu for dinner. The sauce goes great on anything, really, but there is something delicious about lobster on the grill.
Here’s a shot of the sauce…

For the lobster, we had a 16-ounce tail that I brined in a solution of water, chicken broth, salt and some chipotle seasonings. Nothing to fancy, marinated about 4 hours to tenderize the lobster. Fired up the grill to medium heat and sliced the lobster tails in half lengthwise. I grilled them about 2 minutes per side, then finished them off on the side burner in a mixture of chicken broth and a few tablespoons of the homemade barbecue sauce in order to cook them through slowly. Finishing them this way ensures a nice and tender portion of lobster.
