Spicy Tips for Steaming Lobster

Chipotle Steamed and Seared Lobster Tails

We’re huge lobster fans in the Madness household. We once took a trip to Maine just so we could buy lobster from the ubiquitous roadside stands and cook until our hearts and bellies were contented. And then we ate more lobster.

One of our favorite ways to prepare a nice lobster tail is by steaming. You can steam them in the shell and all you really need is water, but that won’t bring you much flavor. Here are few tips we use to achieve delicious steamed lobster tails.

  1. Cut the tails in half lengthwise, as shown in the photo. You can then steam the directly in the shells. Serving them this way goes great for your presentation.
  2. Season the lobster meat with chipotle powder. Chipotle peppers are wonderfully smoky, and highly compliment the flavor of the lobster.
  3. Use beer instead of water or broth for steaming. You’ll certainly notice a subtle flavor difference, and it’s worth it.
  4. After you’ve steamed them, sear the meat side in butter over a hot pan to finish them off. You’ll get a great texture and a bit more color.

    Being Vietnamese, I genetically love chili too. This is a great recipe to add some spice into lobster instead of the boring steaming. Great job!
