
Italian Inspired Grilling Recipes with Chili Peppers
We recently spent 3 weeks in the Mediterranean with an entire week in Italy alone, bopping back and forth between stops, visiting as many highlights as we could manage without succumbing to total exhaustion. There is so much to see, but more importantly, so much to eat! The Mediterranean region is well known for its wonderful food that focuses on fresh, available local ingredients, and the quality shows both on the plate and on the palate.
As much as we loved the food, we did notice a particular lack of chili peppers. Being chiliheads, we’re used to chili pepper flavor and chili pepper heat, and that is something we missed during trip. So, now that we’re back, and to coincide with a kick off of the summer grilling season, we’ve adapted some of our favorite recipes to the Mediterranean region, inspired by Italian cuisine – we use jalapeno peppers and habanero seasonings, of course, but also incorporate freshly grated Parmesan cheese, olive oil, basil and more. We hope you enjoy these recipes. They were delicious!
Spicy Grilled Corn on the Cob with Parmesan Cheese
Ingredients
- 4 large ears of corn, shucked
- 4 tablespoons habanero powder
- 4 teaspoons favorite hot sauce
- 2 teaspoon fresh garlic
- 1/2 cup grated Parmesan cheese
Cooking Directions
- Preheat grill to medium heat.
- In a mixing bowl, combine habanero powder, 2 tablespoons hot sauce and fresh garlic. Mix well.
- Rub each ear of corn down with habanero powder-hot sauce mixture and wrap in aluminum foil.
- Grill about 30-40 minutes, turning occasionally, or until corn is golden.
- Unwrap from foil and set onto serving dishes.
- Sprinkle with remaining hot sauce and Parmesan cheese.
- Serve!

Grilled Salmon Stuffed with Jalapeno Peppers and Parmesan Cheese
Ingredients
- 2 6-ounce salmon fillets, cut lengthwise from the salmon side
- 1/2 cup shredded Parmesan cheese
- 2 tablespoons olive oil
- 1/4 cup pecans, crumbled
- 1 jalapeno pepper, diced
- 6-8 large basil leaves, chopped
- Olive oil for drizzling
Cooking Directions
- Preheat grill to medium heat.
- In a mixing bowl, combine Parmesan cheese, olive oil pecans, jalapeno peppers and basil leaves. Mix well.
- Set salmon fillets on their side and divide the stuffing between the fillets. Wrap fillets around the stuffing and close with toothpicks. See photo for a reference.
- Grill about 8-10 minutes, or until salmon is cooked through.
- Drizzle with fresh olive oil and serve immediately while hot.
