The first week of January is National Pizza week. What a wonderful week to honor. The term “pizza” appeared in recorded history more than a thousand years ago, but evidence of pizza or variations of pizza predate the coining of the phrase, including a type of flatbread recipe from over 7,000 years ago and even older, through the Neolithic age.
It is little wonder that pizza has not only survived through the millennia, but has flourished. Today, it is one of America’s favorite comfort foods, offering up a considerable amount of satisfying variations. After the introduction of tomato sauce to the pizza concept, an entirely new world of creative cooking broke through the barrier of culinary tedium, allowing for new and inventive recipes.
Enter chili peppers! Chili peppers are a no-brainer when it comes to topping pizza. The flavors compliment any number of other ingredients, an no other food offers up such a range of heat. Of course you don’t need to shoot for the murderously hot pizza, but if you so choose, you’re free to top your pizza creations with habanero peppers or even some of the superhots, like the 7 Pot or any of the scorpion peppers of Trinidad.
