Fajita Extravaganza

Chicken Fajitas are an excellent choice for dinner parties. You can prepare most of the components ahead of time and then cook up the chicken when ready for dinner. We had friends over for Cinco de Mayo and put this meal together, which was a hit, but since it was so easy to prepare, we’re adding this to our list of potential party meals. Continue reading

Carbonara with Roasted Jalapenos and Avocado

When we were in Italy last year, we ordered carbonara as often as we could. The perfect combination of pasta, eggs, Parmesan cheese, pancetta and pepper, it always satisfies, especially with a dash of fresh Italian olive oil. I’ve made … Continue reading

A Spicy Cinco de Mayo Breakfast

Happy Cinco de Mayo! We hope you’re having fun celebrating the day in the best way possible. We’re celebrating the way we love to celebrate – with food. And we’re doing it homemade. With chili peppers, of course. We roasted up some jalapeno peppers and incorporated them into a couple different breakfast recipes. I wanted Mexican style breakfast tacos, while Jalapeno Miss wanted an omelet. No problem! Get your Cinco on today. Continue reading

Chipotle-Bacon-Bourbon Barbecue Sauce

This is by far one of our favorite barbecue style sauces over at Chili Pepper Madness. With the weather turning warmer, it’s time to bust out the grills and get your smoke on. The great thing about barbecue sauce is that it goes on just about anything, and this sauce is no exception. We like to make it ahead of time and let it sit in the refrigerator so we can use it all week. Try it out on anything you can grill – fish, pork, beef, chicken. It is so good. Continue reading

Chipotle-Tomato Sauce Recipe

If you are a fan of the smoky chipotle pepper, this chipotle infused tomato sauce will add a new dimension to your meal. We thickened it up a bit with a roux, added pureed cooked vegetables, and let it simmer to allow the flavors to develop. It took on a stew-like quality, nice and thick. Continue reading

Corned Beef Tacos for St. Patrick’s Day

In honor of St. Patrick’s Day, one of our favorite holidays, I decided to serve corned beef. Growing up, it wasn’t a true St. Patty’s Day without corned beef on the menu. Essentially a preserved, pickled meat, this beef brisket was slow cooked in my mother’s crock pot with potatoes and cabbage for many a holiday. Continue reading

Salmon Dinner Salad with Roasted Jalapeno Peppers

We’re trying to shed a few pounds over here in the Madness household, so we’re incorporating a bit more “lighter” fare into the menu, and it is working. The pounds are slowly slipping into thin air, back into the atmosphere. Eating more seafood truly helps. You just have to watch the heavy sauces. Also, salads! Salads can be a tough sell to some folks. They rarely satisfy a powerful hunger, and often get a bad rap for their high-calorie dressings and boring greens. Not so with this salad. Continue reading

Get Spicy with Your Blood Mary

Allow me to set the scene. It is a wintry morning, blustery air jetting snowflakes across the frozen pond. I’m wrapped in a blanket staring out over the frozen water, hoping for a tiny ray of sunlight to punch through the overcast gray. And I’m tired. It is Saturday and I have no obligations whatsoever. Coffee just won’t cut it. Time for a Bloody Mary. Continue reading

Chili Peppers and Pizza

The first week of January is National Pizza week. What a wonderful week to honor. The term “pizza” appeared in recorded history more than a thousand years ago, but evidence of pizza or variations of pizza predate the coining of the phrase, including a type of flatbread recipe from over 7,000 years ago and even older, through the Neolithic age. Continue reading
