Carbonara with Roasted Jalapenos and Avocado

When we were in Italy last year, we ordered carbonara as often as we could. The perfect combination of pasta, eggs, Parmesan cheese, pancetta and pepper, it always satisfies, especially with a dash of fresh Italian olive oil. I’ve made … Continue reading

Spice Up Your Valentine’s Day Meal with Lobster Carbonara

Happy Valentine’s Day! Jalapeno Miss made a special request for tonight’s meal, but she was slightly vague. Her request – Carbonara! I take that as a special challenge to make it fun and interesting. So, here’s the plan – Spicy Lobster Carbonara with Shaved Brussels Sprouts Salad. She’s in charge of the drinks. Romesco Sauce with Jamaican Red Mushroom Chili Peppers

During our Mediterranean trip, we visited Barcelona, Spain. It is such a gorgeous city filled with impressive culture, architecture, and especially food. Homemade Macaroni and Cheese with Kramer’s Wing Rub

I’d like to pay a compliment to Kramer’s Wing Rubs. I did a review of 3 of their spicy wing rubs, which we at Chili Pepper Madness greatly enjoyed. You can find the review here. Chili Pepper Tagliatelle – A Homemade Pasta Recipe

Jalapeno Miss and I were having a bit of fun in the kitchen with our new pasta maker and decided to see what happens when we incorporate a healthy dose of chili powder into a basic homemade pasta recipe. The results were rather fun. You won’t get a massive burst of heat or flavor addition to the actual pasta from the chili powder, but what you do get is a wonderful red color to the pasta that goes great with a silky sauce like carbonara or Alfredo, or maybe even simple olive oil. When you’re looking for a fun and interesting presentation, this might be an option for you.
