Fajita Extravaganza

Chicken Fajitas are an excellent choice for dinner parties. You can prepare most of the components ahead of time and then cook up the chicken when ready for dinner. We had friends over for Cinco de Mayo and put this meal together, which was a hit, but since it was so easy to prepare, we’re adding this to our list of potential party meals. Continue reading

Chipotle-Bacon-Bourbon Barbecue Sauce

This is by far one of our favorite barbecue style sauces over at Chili Pepper Madness. With the weather turning warmer, it’s time to bust out the grills and get your smoke on. The great thing about barbecue sauce is that it goes on just about anything, and this sauce is no exception. We like to make it ahead of time and let it sit in the refrigerator so we can use it all week. Try it out on anything you can grill – fish, pork, beef, chicken. It is so good. Continue reading

Chipotle-Tomato Sauce Recipe

If you are a fan of the smoky chipotle pepper, this chipotle infused tomato sauce will add a new dimension to your meal. We thickened it up a bit with a roux, added pureed cooked vegetables, and let it simmer to allow the flavors to develop. It took on a stew-like quality, nice and thick. Continue reading

Romesco Sauce with Jamaican Red Mushroom Chili Peppers

During our Mediterranean trip, we visited Barcelona, Spain. It is such a gorgeous city filled with impressive culture, architecture, and especially food. It is a bit like a traditional pesto, but made with toasted almonds, chili peppers, tomato, red wine vinegar, olive oil, crusty bread and other seasonings. Continue reading

Spice Up Your Pan Sauces with Habanero Peppers

Pan sauces are a great way to add a ton of flavor to your meal. A pan sauce is a simple thing with complex flavor, as it utilizes the brown bits of meat and seasonings leftover at the bottom of the pan after you’ve sauteed your meal. Those little brown bits are jam packed with flavors and it is sad to see them go to waste. Incorporating a bit of habanero peppers into them will add an additional flavor element and will make the chilihead in you very happy. Continue reading

Spicy Mustard Dip Recipe

Hanging out in the Florida Keys around Super Bowl time, we’re finding everyone serves up these delicious crab claws with a mustard dipping sauce. We like the sauce, but thought we’d work up our own version. This is great not only on the local stone crab claws, but on any seafood, as a dip for hot wings, or even a chip dip or sandwich spread.
