Salmon Dinner Salad with Roasted Jalapeno Peppers

We’re trying to shed a few pounds over here in the Madness household, so we’re incorporating a bit more “lighter” fare into the menu, and it is working. Romesco Sauce with Jamaican Red Mushroom Chili Peppers

During our Mediterranean trip, we visited Barcelona, Spain. It is such a gorgeous city filled with impressive culture, architecture, and especially food. One particular flavor we encountered has become a new favorite – Romesco Sauce. Romesco sauce is a multi-purpose sauce used on any number of dishes. Cooking with the Trinidad Moruga Scorpion

The Trinidad Moruga Scorpion is one hot chile pepper. How hot? Recent studies cap this baby at over 2 Million SHU (Scoville Heat Units), and that is just plain hot. To put it in perspective, a typical jalapeno pepper measures around 5,000 SHU. Standard pepper spray is between 2-5 Million. I recently cooked up a batch of Pimiento de Padron chili peppers two different ways with a Pesto Crusted Salmon and Cheesy Potato Stuffed Padron peppers. The thing I like about padron peppers is that they are not very spicy but do offer enough kick to bring some heat.
