Fajita Extravaganza

Chicken Fajitas are an excellent choice for dinner parties. You can prepare most of the components ahead of time and then cook up the chicken when ready for dinner. We had friends over for Cinco de Mayo and put this meal together, which was a hit, but since it was so easy to prepare, we’re adding this to our list of potential party meals. Continue reading

Chipotle-Bacon-Bourbon Barbecue Sauce

This is by far one of our favorite barbecue style sauces over at Chili Pepper Madness. With the weather turning warmer, it’s time to bust out the grills and get your smoke on. The great thing about barbecue sauce is that it goes on just about anything, and this sauce is no exception. We like to make it ahead of time and let it sit in the refrigerator so we can use it all week. Try it out on anything you can grill – fish, pork, beef, chicken. It is so good. Continue reading

Grilled Cheese Sandwich Recipes – with Chili Peppers

In honor of National Grilled Cheese Month (yes, did you know the entire month of April is dedicated to grilled cheese sandwiches?), we have created 2 different recipes for grilled cheese sandwiches that highlight chili peppers in different ways. We’re not trying to hide the chili peppers here. Instead, we’re trying to blend them in so their flavors compliment the selection of cheeses. These two were quite delicious. Continue reading

Chipotle-Tomato Sauce Recipe

If you are a fan of the smoky chipotle pepper, this chipotle infused tomato sauce will add a new dimension to your meal. We thickened it up a bit with a roux, added pureed cooked vegetables, and let it simmer to allow the flavors to develop. It took on a stew-like quality, nice and thick. Continue reading

Oso Pepper Company Enters the Market

A new hot sauce maker has entered the market, and I’m happy to help spread the word. Vincent Verret of Oso Pepper Company, LLC, sent along some of his sauces and they are quite delicious. I have personally tried the “Cry Out Chili Sauce”, which is a spicy and flavorful blend of habanero, serrano, jalapeno, chili de arbol, cherry pepper, and tamari; “Cry Out Surf Sauce”, a spicy and sweet hot sauce made with mango, pineapple and habanero peppers; and the “Cry Out Italian Pesto”, which has a mild spice level but pleasant herb flavor. Chili Pepper Sauces for National Sauce Month

March is “National Sauce Month” and that is newsworthy at Chili Pepper Madness. We’re sure you’ve heard such phrases as “The Sauce is the Boss” and “The Secret is in the Sauce”. They play nice with other ingredients, bring both astonishing flavor and heat range, and stand alone perfectly well on their own. Continue reading

Get Spicy with Your Blood Mary

Allow me to set the scene. It is a wintry morning, blustery air jetting snowflakes across the frozen pond. I’m wrapped in a blanket staring out over the frozen water, hoping for a tiny ray of sunlight to punch through the overcast gray. And I’m tired. It is Saturday and I have no obligations whatsoever. Coffee just won’t cut it. Time for a Bloody Mary. Continue reading
