When we were in Italy last year, we ordered carbonara as often as we could. The perfect combination of pasta, eggs, Parmesan cheese, pancetta and pepper, it always satisfies, especially with a dash of fresh Italian olive oil. I’ve made … Continue reading →

If you are a fan of the smoky chipotle pepper, this chipotle infused tomato sauce will add a new dimension to your meal. We thickened it up a bit with a roux, added pureed cooked vegetables, and let it simmer to allow the flavors to develop. It took on a stew-like quality, nice and thick. Continue reading →

In honor of St. Patrick’s Day, one of our favorite holidays, I decided to serve corned beef. Growing up, it wasn’t a true St. Patty’s Day without corned beef on the menu. Essentially a preserved, pickled meat, this beef brisket was slow cooked in my mother’s crock pot with potatoes and cabbage for many a holiday. Continue reading →

We’re trying to shed a few pounds over here in the Madness household, so we’re incorporating a bit more “lighter” fare into the menu, and it is working. The pounds are slowly slipping into thin air, back into the atmosphere. Eating more seafood truly helps. You just have to watch the heavy sauces. Also, salads! Salads can be a tough sell to some folks. They rarely satisfy a powerful hunger, and often get a bad rap for their high-calorie dressings and boring greens. Not so with this salad. Continue reading →

Allow me to set the scene. It is a wintry morning, blustery air jetting snowflakes across the frozen pond. I’m wrapped in a blanket staring out over the frozen water, hoping for a tiny ray of sunlight to punch through the overcast gray. And I’m tired. It is Saturday and I have no obligations whatsoever. Coffee just won’t cut it. Time for a Bloody Mary. Continue reading →

The first week of January is National Pizza week. What a wonderful week to honor. The term “pizza” appeared in recorded history more than a thousand years ago, but evidence of pizza or variations of pizza predate the coining of the phrase, including a type of flatbread recipe from over 7,000 years ago and even older, through the Neolithic age. Even more evidence that spicy food is becoming more and more popular — grandma wants me to make jalapeno poppers for Christmas this year. Jalapeno poppers don’t need to be overly spicy, but they often have enough of a heat kick to make the tongue stand up and take notice. And when grandma wants poppers, you know they must be good.
