Your Stuffing Can Do Double Duty

In the kitchen recently, we were looking for a healthier meal option and decided on chicken. Chicken, as we all know, can be a bit boring though it is quite fabulous when properly prepared. Luckily, there are many options for spicing it up. This time, we opted for stuffed chicken breasts. Since there are only 2 of us, I went about preparing what I felt was a proper amount of stuffing for a couple of large breasts, including some jalapeno peppers, an apple, some Parmesan cheese, a bit of Italian sausage for extra flavor and some seasonings. Guacamole, but Not Guacamole – A Topping for Grilled Salmon

Today, I seasoned some salmon with a bit of salt, chili powder and grated lemon peel, then seared them over high heat and baked them for 10 minutes. The salmon fillets always come out nice and juicy this way. While they were cooking, I had the whole 10 minutes to consider – what can I add to the salmon to finish it off? Looking through my fresh ingredients, I realized I could whip up a quick homemade guacamole, which would be great, but then I thought – what if I incorporated the guacamole ingredients without actually making the guacamole?

Experimenting with Rutabaga

First off, I’m surprised that I’ve never encountered rutabaga before. My parents were not adventurous cooks growing up, so my palate was never developed until later in life, and it is still developing. I haven’t seen it in restaurants, at least not featured in any way. Jalapeno Miss slipped the bulky thing from the produce area and into the cart. We only purchased one of them and brought it home for experimentation.
