Satisfy your craving for pizza AND grilled cheese with this sandwich recipe, with homemade pizza sauce, spicy pepperoni, jalapeno peppers and plenty of mozzarella cheese melted between 2 slices of buttered sourdough bread. Delicious!

I just...can't even. SUCH a great sandwich. At first I struggled. Do I call it a grilled cheese recipe? A pizza sandwich recipe? I mean, it's both, technically. So much awesome melty mozzarella. Loads of pepperoni, or hey, spicy soppressata, which is even better in some ways. BOTH are stellar. Homemade Pizza Sauce? Um, YES, please. And do not forget, the pièce de résistance (well, sort of), roasted jalapeno peppers! Cue Mike's painfully obvious #JalapenoObsession. Seriously, I can't help myself. I do love this sandwich.

I don't know, why would I not? There isn't a whole lot to it, really. There doesn't need to be when you have such outstanding ingredients. Filing this one under Quick and Easy Meals because it's super easy to put together. In a nutshell, here is how you put these babies together.

Making a Spicy Pizza Grilled Cheese Sandwich - Instructions

First! Set the slices of sourdough down (2 TOPS and 2 BOTTOMS) and spread each with pizza sauce. Sorry, you DO have to have your Homemade Pizza Sauce ready ahead of time. Of course a storebought brand will do.

Next! Top the bottom sourdough pieces with mozzarella cheese and pepperoni or soppressata slices.

Next, top the TOP pieces with shredded Parmesan cheese and sliced roasted jalapeno peppers, if using. Don't know how to roast jalapeno peppers? Here you go: How to Roast Chili Peppers. So many ways. 

Place the top slices onto the bottom slices, so you have a fully formed sandwich that just isn't cooked up yet.

Now, heat a grill pan to medium heat. Lightly butter the TOPS of the sandwiches and grill 4-5 minutes, or until the top is nicely browned.

Lightly butter the bottom pieces and flip the sandwiches. Grill another 4-5, until nicely browned and cheeses are melting.

Finally! Cool and serve with extra pizza sauce on the side for dipping.

Ingredients

  • 4 thick slices of sourdough bread
  • 3 ounces pizza sauce + more for dipping – See our Spicy Homemade Pizza Sauce Recipe
  • 6 ounces mozzarella cheese
  • 12 slices (or more) pepperoni or spicy soppressata
  • ¼ cup shredded Parmesan cheese
  • Roasted jalapeno peppers, sliced, if desired
  • 3 ounces softened butter
