What I most enjoy about Tanteo Jalapeño Tequila is the fresh flavor of the jalapeno peppers. You can really taste them in there as if I’ve just infused it myself. It’s all about their process which uses a special variety of locally sourced jalapeno peppers that are hand chopped and infused within 24 hours of harvesting, using both young and mature ripe jalapenos for a balanced piquancy.

Sounds perfect to me. It tastes phenomenal sipping straight from the bottle, but for the party, we’re getting creative with drinks and a couple of big tasting recipes you can easily whip together on the grill for practically any sized crowd. Let’s talk about the menu. We’re grilling up two party-favorite recipes you can toss onto the grates and hang out while they’re cooking, each of them incorporating jalapeno-infused tequila. And, we’re mixing up three summer-worth tequila cocktails to keep your guests refreshed. Here’s what’s on the menu.

The Paloma is Mexico’s most beloved cocktail, and since we’re mixing with tequila, it’s an absolute must, with freshly squeezed citrus fruit. Tequila practically DEFINES the margarita, so we’re serving up a spin on the classic recipe with grilled pineapple to pair with our grub. And, we’re offering up a Blueberry Smash, a cocktail conceived by Mixologist Patty that is nice and light with freshly muddled blueberries and lime.
For the grillers, we’re seasoning up shrimp and skewering them with fresh pineapple, then mopping them with a homemade tequila-honey glaze, along with chicken wings that have been marinated, grilled, then drizzled with a sweet-tart lime margarita glaze. Make your guests very happy with your tequila party menu. Add in a few bags of chips and dip and a bucket of icy water bottles and you’re ready to hit the ground running, Chili Pepper Madness style.

The cocktail recipes are written for an individual drink, so scale up according to the size of your party. If making large batches, you might use a blender instead of muddling each individual drink. The grilling recipes are written to serve 8.

Here are the recipes.

Grilled Margarita Chicken Wings

Ingredients

  • 32 chicken wing pieces
  • ¼ cup olive oil
  • ½ teaspoon cumin
  • 3 tablespoons chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • ¼ cup Tanteo Jalapeño Tequila
  • ¼ cup honey
  • Juice from 2 limes
  • Juice from 1 orange
  • Juice from 1 lemon

Cooking Directions

  1. Pat the wings dry and add them to a large bowl. Drizzle with olive oil and toss.
  2. Season with cumin, chili powder, garlic powder, and salt and pepper. Toss, then add enough water to cover. Cover and set in the fridge at least 2 hours to brine.
  3. Make your glaze by combining tequila, honey, and citrus juices in a small pot. Whisk together and bring to a quick boil, then reduce heat and simmer 10 minutes to thicken. Remove from heat and cool.
  4. Heat your grill to medium-high heat, but keep one side cooler.
  5. Remove wings from brine and pat dry. Mop each with a bit of the margarita glaze and set them onto the lightly oiled grill racks.
  6. Cook them 5 minutes per side, then transfer them over to the indirect heat. Mop with more glaze, then cover and grill until wings are cooked through, about another 10 minutes.
  7. Remove, drizzle with extra glaze and serve with whatever glaze remains on the side.

Serves 8

Tequila Glazed Shrimp and Pineapple Skewers

Ingredients

  • ¼ cup Tanteo Jalapeño Tequila
  • ¼ cup pineapple juice
  • Juice from 1 lime
  • 1 tablespoon sugar
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 24 large shrimp, peeled and deveined
  • 1 pineapple, cut into chunks. You’ll need 16 pieces, about the same size as the shrimp.

Cooking Directions

  1. Make your glaze by adding tequila, pineapple juice, lime juice, sugar, chili powder and salt in a small pot. Whisk and bring to a quick boil.
  2. Reduce heat and simmer about 10 minutes, until the glaze slightly thickens. Remove from heat and cool.
  3. Prepare your kababs by skewering 3 shrimp and 2 chunks of pineapple per skewer. Season with salt and pepper then mop each with glaze.
  4. Heat grill to medium heat and add skewers. Grill 2-3 minutes per side, adding a bit of glaze as you grill, until the shrimp is cooked through.
  5. Drizzle with a bit more glaze and serve.

Serves 8

Classic Paloma

Ingredients

  • ½ grapefruit
  • 1 lime
  • ¼ ounce Agave
  • 2 ounces Fresca or other grapefruit soda
  • 2 ounces Tanteo Jalapeño Tequila
  • Grapefruit wedge for garnish
  • Salt for rimming the glass

Mixing Directions

  1. Fill a cocktail shaker with ice.
  2. Squeeze the ½ grapefruit and lime into a cocktail shaker.
  3. Add agave and Tanteo tequila and shake well.
  4. Moisten the rim of a glass with the grapefruit wedge and dip the glass into the salt to rim the glass.
  5. Fill the glass with ice and strain the mixture into the glass.
  6. Top off with grapefruit soda (Fresca).
  7. Garnish with a grapefruit wedge.

Grilled Pineapple Margarita

Ingredients

  • 3 inches of pineapple rounds
  • 1 lime
  • ¼ ounce Agave
  • 2 ounces Tanteo Jalapeño Tequila
  • Pineapple wedge for garnish
  • Salt for rimming the glass

Cooking Directions

  1. Heat a grill to medium heat.
  2. Cut the pineapple into 3 thick rounds.
  3. Grill for 2-3 minutes per side.
  4. Cut the grilled pineapple into smaller pieces, removing the center core.
  5. Squeeze the lime into a cocktail shaker.
  6. Add all of the pineapple pieces except a wedge for garnish.
  7. Muddle the pineapple as much as possible.
  8. Add ice, Agave and tequila and shake well.
  9. Moisten the rim of a glass with the pineapple wedge and dip the glass into the salt to rim the glass.
  10. Fill the glass with ice and strain the mixture into the glass.
  11. Garnish with pineapple wedge.

Blueberry Smash

Ingredients

  • 20 blueberries
  • ½ lime
  • ¼ ounce Agave
  • ¼ ounce Elderflower liquor
  • 1 ½ ounces Tanteo Jalapeño Tequila
  • 3 ounces Tonic
  • 4 blueberries for garnish
  • Salt for rimming the glass

Cooking Directions

  1. Squeeze the lime into a cocktail shaker.
  2. Add the blueberries and muddle.
  3. Add ice, Elderflower liquor and tequila and shake well.
  4. Moisten the rim of a glass with the lime and dip the glass into the salt to rim the glass.
  5. Fill the glass with ice and strain the mixture into the glass and top off with Tonic.
  6. Garnish with a skewer of blueberries.
