Spotlight Chili Pepper: The Pasilla Pepper!

Pasilla Pepper
250 - 3,999 Scovilles: Pasilla or “little raisin” properly refers to the dried chilaca pepper. The chilaca, when fresh, is also known as pasilla bajio, or as the chile negro or “Mexican negro” because, while it starts off dark green, it ends up dark brown. It typically grows from 8 to 10 inches long.

New Recipe!
We're always working up new chili pepper recipes! Here are some of the latest.
Flaming Corn Salsa

This is one of our very favorite salsas. We experimented with several roasted pepper combinations, and found the fusion of fresh corn (taken right from the cob), spicy serranos, suave jalapeno pepeprs, and roasted tomatillos to be absolutely perfect. Served warm, this salsa has a rich flavor that will embrace you.

Caliente Cucumber Sauce

Here's a fun and very spicy spin off of a traditional Greek-style cucumber sauce, but with loads of roasted peppers. For this recipe, we opted for the mighty habanero pepper, and ever fun jalapeno pepper, and tasty pimento peppers because we have so many from our garden this year. The result? Good stuff!

Master Gardener: A touch of Thailand in the garden
Flagstaff landscapes absolutely flattened by 50-plus inches of snow and nourished by torrential monsoons are stretching toward the vernal sun. All kinds of planting options beckon -- a compact kitchen garden overflowing with emerald and ruby lettuces and herbs, perhaps or a Hope garden brimming with vegetables to share with our neighbors -- big-picture choices, indeed.
