Cajun-Apple Stuffed Poblano Peppers

This recipes came to us after experimenting with various stuffing mixtures for pork chops. This one absolutely delivers on flavor. Chopped apples seasoned with Cajun spices make for a delicious stuffed poblano pepper. It's a perfect side dish. We also made a batch of Apple-Cajun Stuffed Jalapeno Peppers with the same mixture. So perfect!

Lobster Thermidor ala Madness

After much research for a new Valentine's Day dinner idea, we landed on one that turned out absolutely delicious, but boy did it a take a while to prepare. It is called Lobster Thermidor, a classic French meal, though we've incorporated our own chili peppers into the mix for a spicy twist. There are quite a number of steps in making this recipe and it is time consuming, though it's not overly difficult and is certainly worth the effort. Just ask Jalapeno Miss.

White Cheese and Pepperoni Omelets

This is a variation of a fun pizza omelet, with a white cheese focus - in this case, Feta and Mozzarella cheeses. We incorporate pepperoni slices for the meaty flavor, and plenty of chili pepper seasonings to draw it all together. Feel free to incorporate fresh peppers as well, though be sure to add them along with the cheeses for that garden fresh taste.
