Welcome, Chili Pepper Lover! We're glad it's June. Why? Our pepper seed had sprouted and have become some cute little seedlings, and have been transplanted to the garden. some of them wilted a bit at first, but with plenty of water and a cooperating sun, they seem to have taken up root.

We're always working up new chili pepper recipes! Here is one of our latest.

Chili Rubbed Pork Chops

Pork chops are awesome on the grill, especially when rubbed down with your favorite chili powder. Honey brings a tasty balance between spiciness and sweetness. Also, pork chops are easy to grill up. Sear them over high heat to seal in the flavor and you'll have yourself a nice quick meal.

Ingredients

  • 1 pound pork chops (thin cut, about 1/4 inch each)
  • 2 tablespoons honey
  • 2 tablespoons chili powder (get the spicy kind!)

Directions

  1. Get your grill good and hot.
  2. Brush the pork chops with honey on each side.
  3. Coat each chop with chili powder.
  4. Grill or saute 1-2 minutes per side, or until the pork chops are no longer pink in the middle, cooked throughout. Do not overcook or you'll lose some of the moisture.
  5. Serve!

NOTE: We served these babies up with garlic mashed potatoes and they went over with a bang!
