Chipotle Turkey Burgers

We often espouse the wonders of turkey burgers. They are healthier and lower calorie than beef and jam packed with flavor if you prepare them right. One issue some people have with turkey burgers, however, is dryness. Turkey is lean and certainly dry out if not handled properly. We have a solution - ricotta cheese. You don't need a lot of ricotta to up the moisture, and it doesn't have a strong flavor so you're free to introduce whatever power flavors you're looking for. For this recipe, we've opted for the chipotle.
