Buffalo Chicken Frittata Casserole

We weren’t 100 percent sure if this combination of buffalo sauce with eggs would turn out as we hoped, but the mixture is surprisingly good. After we finished this meal, we wanted more, so keep that in mind as you prepare. It just might not be enough.
Ingredients
- 3 eggs, beaten
- 12 ounces small white potatoes, peeled and chopped
- 12 ounces cooked chicken, chopped
- 2 tablespoons buffalo sauce
- 3 ounces Mexican cheese, shredded
- Sliced avocado for topping
Directions
- Boil the potatoes 10 minutes until soft. Drain then transfer to a wide, lightly oiled baking dish.
- Mash the potatoes into the bottom of the baking dish, ensuring you cover the bottom entirely.
- In a separate mixing bowl, combine cooked chicken with buffalo sauce. Mix to coat.
- Add eggs and mix.
- Spread chicken and egg mixture over the potatoes.
- Top with cheese.
- Bake 20-30 minutes. Remove and allow to cool.
- Top with slice avocado and serve!
