Here's a fun and very spicy spin off of a traditional Greek-style cucumber sauce, but with loads of roasted peppers. For this recipe, we opted for the mighty habanero pepper, and ever fun jalapeno pepper, and tasty pimento peppers because we have so many from our garden this year. The result? Good stuff!
Ingredients
1 habanero pepper
2 jalapeno peppers
4 pimento peppers
2 tablespoons horseradish
1 medium sized cucumber, diced
Splash lemon juice
Cooking Directions
Preheat grill to medium heat.
Roast peppers over low flames until skins begin to blacken.
Remove peppers. Stem and core them all. You can leave the cores if you prefer a much hotter sauce.
Transfer peppers to a food processor. Add horseradish, lemon juice and cucumbers.
Mix until well combined.
Serve over your preferred meal.
NOTE: This would be great with a traditional gyro meal if you like your gyros with mega-heat. But we like to serve this over white fish.
