Classic Black Bean Chili
Black bean chili is quite distinctive from compared to the more traditional red bean chili, yet it is quite delicious and welcomed when you're searching for something different.
Ingredients
- 1 medium Spanish onion, diced
- 1 poblano pepper, diced
- 3 jalapeno peppers, diced
- 1 pound ground chuck
- 1 1/2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 3 garlic cloves, crushed
- 2 (15 ounce) cans diced tomatoes, undrained
- 2 (15 ounce) cans black beans, drained
- 6 tablespoons chopped fresh cilantro
- 1 teaspoon olive oil
- Salt and pepper to taste
Cooking Directions
- Heat a large skillet to medium heat. Add onion and peppers with olive oil. Cook about 4-5 minutes, or until the vegetables soften.
- Add ground chuck and cook until browned, about 8-10 minutes. Crumble. Drain off excess fat.
- Transfer to a large pot and add broth and remaining ingredients.
- Heat to low-medium and simmer 20-30 minutes, or until the chili thickens. Cover and reduce heat to low if desired. You can keep it simmering several hours this way if desired, but you may need to add more broth if it vaporates out.
- Check to make sure ground chuck is cooked through.
- Serve with sour cream!
