Chili Pepper Meatballs
I hesitate to classify these meatballs at appetizers because they can serve so many functions. Seasoned liberally with chili powder, they're nice and spicy. You can serve them with a simple sauce for dipping as an appetizer, perhaps toss them into a slow cooker with an easy chili sauce. Or, toss them into a pasta dish for easy spaghetti and meatballs. So many ideas.

Ingredients
- 1 pound ground beef
- 1 heaping tablespoon chili powder – I used ground chili arbol
- 1 teaspoon minced garlic
- 2 tablespoons Parmesan cheese
- 2 tablespoons bread crumbs – I used unsalted home-made pretzel crumbs
- 1 teaspoon olive oil
Cooking Directions
- Add all ingredients except olive oil to a mixing bowl and mash up with your fingers making sure all of the ingredients spread through the meat
- Hand form the meat into small meatballs about 1 ½ inch in diameter
- Heat a pan to medium heat and add olive oil
- Add meatballs and sauté about 8 minutes or until meatballs are cooked through to your preference. Cooking times will vary depending on the size of your meatballs.

Notes: A good sized meatball should fit comfortably in the palm of your hand, about the size of a golf ball. We tossed ours with some spaghetti. See below.
