Crepes with Maple-Kiwi-Chili Sauce

Crepes are fun in the morning - fun to make and fun to eat. They roll up perfectly and you're free to experiment with a multitude of stuffing mixtures, whether you prefer sweet or hearty style. They're just as good without the stuffing. Here, we offer up a tasty breakfast crepe recipe that needs nothing other than a sweet sauce.
Ingredients
- 2 eggs
- 1 1/2 cups milk
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon chili powder
Cooking Directions
- In a large mixing bowl, combine flour, baking soda, salt, sugar and chili powder. Mix well.
- In a separate mixing bowl, beat eggs with milk.
- Add to the dried ingredients and stir until smooth. NOTE: The batter should be slightly runny and not too thick.
- Heat a crepe (or other) pan to medium-high heat.
- Pour about 1/4 cup of the crepe batter over crepe pan and form into a thin circle. A crepe pan is perfect for this, as it is the proper shape.
- Cook about 1-2 minutes. You'll know it's time to flip when the bottom side browns thoroughly, bubbles form in the top batter, and the edges slightly curl and brown.
- Flip and cook about 30 more seconds.
- Transfer to warming plates and repeat until you've used up all the batter.

- Makes about 6-8 crepes.
