Crepes with Maple-Kiwi-Chili Sauce

Crepes with Maple-Kiwi-Chili Sauce

Crepes are fun in the morning - fun to make and fun to eat. They roll up perfectly and you're free to experiment with a multitude of stuffing mixtures, whether you prefer sweet or hearty style. They're just as good without the stuffing. Here, we offer up a tasty breakfast crepe recipe that needs nothing other than a sweet sauce.

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon chili powder

Cooking Directions

  1. In a large mixing bowl, combine flour, baking soda, salt, sugar and chili powder. Mix well.
  2. In a separate mixing bowl, beat eggs with milk.
  3. Add to the dried ingredients and stir until smooth. NOTE: The batter should be slightly runny and not too thick.
  4. Heat a crepe (or other) pan to medium-high heat.
  5. Pour about 1/4 cup of the crepe batter over crepe pan and form into a thin circle. A crepe pan is perfect for this, as it is the proper shape.
  6. Cook about 1-2 minutes. You'll know it's time to flip when the bottom side browns thoroughly, bubbles form in the top batter, and the edges slightly curl and brown.
  7. Flip and cook about 30 more seconds.
  8. Transfer to warming plates and repeat until you've used up all the batter.
  9. Roll each crepe and top with Maple-Kiwi-Chili Sauce - Recipe Here.
  10. Makes about 6-8 crepes.
