Grilled Corn with Chipotle Mayo
Nothing says summertime like fresh corn on the cob. Corn is ideal for the grill, which helps bring out the natural sweetness. It's easy, too - a bit of indirect heat and you can just leave them alone to cook while you prepare other dishes.
Ingredients
- 4 ears corn, shucked
- 2 tablespoons olive oil
- Salt to taste
- 2 tablespoons chipotle powder
- 2 tablespoons mayo
- 1 teaspoon spicy brown mustard
- 1 teaspoon minced garlic
- Juice from half a lime
Cooking Directions
- Preheat grill to medium heat.
- Rub corn down with olive oil and sprinkle with salt and 1 tablespoon chipotle powder.
- Wrap corn in aluminum foil and grill about 30 minutes, or until corn is golden.
- Meanwhile, to a mixing bowl, add 1 tablespoon chipotle powder, mayo, mustard, garlic and lime juice. Mix well.
- Lather spicy mayo mixture onto hot corn and serve!
