Habanero and Brussels Sprouts Stuffed Pork Recipe
Ground pork makes it easy to mold the meat around a spicy stuffing mixture. The texture is a bit like meatloaf with extra deliciousness on the inside, or much like a stuffed burger recipe, which we love.
Ingredients
- 1 pound ground pork
- 4 habanero peppers, chopped
- 8 ounces Brussels Sprouts, quartered
- 1/2 onion, chopped
- 6 ounces Swiss cheese
- 2 tablespoons Cajun seasonings
- 1 egg
- 1/4 cup bread crumbs
- Salt to taste
- 1 teaspoon olive oil
For the Stuffing
- Blanche the Brussels Sprouts in boiling water for 2 minutes. Remove from heat and drain.
- Heat a sauté pan to medium heat and add onion and Brussels Sprouts. Cook about 8 minutes, or until the sprouts and onion are cooked through and soft.
- Remove from heat and finely chop. Allow to cool.
- Transfer chopped vegetables to a mixing bowl. Add habanero peppers and Swiss cheese. Mix well.
For the Pork
- To a mixing bowl, combine ground pork, bread crumbs, Cajun seasoning and egg.
- Hand mix until uniform, but do not overmix.
- Form the pork into 4 uniform patties.
- Divide the stuffing mixture over 2 of the seasoned pork patties. You will basically have 2 piles of stuffing over 2 of the patties.
- Form the remaining 2 pork patties over the tops of the stuffing piles. Hand form the meat completely around the stuffing. Essentially, you are simply forming the meat around the stuffing, encasing it.
- Set the stuffed pork onto a lightly oiled baking dish and bake in a preheated oven at 350 degrees F for 30 minutes.
- Serve with your favorite sauce!
