Mike's Mighty Meat Sauce with Chili Peppers

A new favorite! We created this recipe last night after an overabundance of Anaheim and serrano peppers were pulled from our garden. We would have included a LARGE poblano pepper in this recipe, but we only had a small poblano available. Alas, but you can certainly include a larger poblano. Let this simmer at least 30 minutes, preferably an hour or more to allow the sausage flavor to permeate the sauce.
Mike's Mighty Meat Sauce with Chili Peppers
Ingredients
- 1 small poblano pepper, chopped
- 3 serrano peppers, chopped
- 2 Anaheim pepper, chopped
- 8 asparagus tips, chopped
- 15-20 fresh basil leaves, coarsely chopped
- 1 teaspoon minced garlic
- 12 ounces ground sausage
- 16 ounces tomato sauce
- 1 teaspoon olive oil
Cooking Directions
- Heat a sauce pan to medium heat and add olive oil.
- Add peppers and asparagus tips. Stir and cook about 5 minutes.
- Add sausage and coarsely chop in the pan. Cook about 10 minutes.
- Add tomato sauce, minced garlic and chopped basil.
- Reduce heat to low and simmer, uncovered, 30 minutes.
- Serve over pasta!
