Mike's Roasted Red Pepper Meatloaf

When you're looking for something thick and hearty, meatloaf is always a good choice. We like to keep it on our menu, but there are so many ways to prepare a meatloaf, which we love. In this recipe, we opt for ground beef loin and pork, along with roasted pepper and plenty of vegetable seasonings. Learn how to roast chili peppers here. We also served it topped with our Thick Roasted Red Pepper Sauce.
Ingredients
- 2 pounds beef loin ball tip steak, boneless, ground
- 1 pound pork, ground
- 1 roasted red bell pepper
- 1 yellow onion, chopped
- 1 tablespoon creole seasoning
- 1 tablespoon celery salt
- 1 tablespoon cajun seasoning
- 2 tablespoons chili powder
Cooking Directions
- If your bell peppers have not been roasted yet, roast them - Learn how to roast chili peppers here.
- Heat a saute pan to medium.
- Add onion with a splash of olive oil.
- Saute about 5 minutes, until they are translucent.
- Transfer onions, chili pepper and seasonings to a food processor.
- Process for about a minute until a nice paste forms.
- Transfer to a large mixing bowl.
- Add ground meats and mix well. Do not over-mix, keeping it chunky.
- Set it into a loaf pan and form into a loaf.
- Bake at 350 for 45 minutes.
- Serve with a tomato or red pepper sauce. We used our Thick Roasted Red Pepper Sauce.
