Mike's Sweet Chili

This chili forgoes the focus on tomato sauce and brings in the beer! It’s on the sweeter side with the chocolate and sugar, but absolutely on the delicious side. Include sliced jalapeno peppers for some extra kick, or introduce some sliced habanero peppers for some REAL spice. This one has a good medium heat level and plenty of flavor.
Ingredients
- 1 pound ground beef
- 1 pound chicken, chopped
- 1 small onion, chopped
- 1 teaspoon minced garlic
- 1 can beer of choice
- 8 ounces tomato sauce
- 1 cup wataer
- 3 tablespoons chili powder
- 2 tablespoons ground cumin
- 6 beef bouillon cubes
- 2 teaspoons dried basil
- 2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon sugar
- 1 ounce semi-sweet chocolate
- Hot sauce to taste (a few splashes will do)
- 1 teaspoon flour
- 1 teaspoon cornmeal
- 1 tablespoon warm water
Cooking Directions
- In a large pan, brown beef and chicken together, about 2 minutes.
- Stir in onion and garlic and cook until onion is tender.
- Add remaining ingredients except for flour, cornmeal and tablespoon of warm water. Mix well.
- Reduce heat to low, cover, and simmer for 1-2 hours.
- In a mixing bowl, combine flour, cornmeal and tablespoon of water. Mix.
- Pour into chili and stir.
- Cover chili and cook and additional 20 minutes to thicken.
- Serve!
