Pepper Flake Eggs in Hats

Finally managed a quick getaway to our cabin up north, but that doesn't mean we can't manage a fun country style breakfast with a spicy kick. We pulled out the red pepper flakes and goat cheese to make our fried eggs and toast fun.
Ingredients
- 4 large eggs
- 4 slices bread
- 4 teaspoons soft goat cheese
- Red pepper flakes to taste
- Salt and pepper to taste
Cooking Directions
- Slice circles out of the middles of the bread. It's easiest to do this with a coffee cup rim, or the rim of a small glass.
- Heat a frying pan to medium heat and spray with cooking oil.
- Set bread onto pan and lightly toast, about 1 minute each side.
- Crack an egg into the holed-out center of each toast slice and season with red pepper flakes, salt and pepper.
- Fry about 2 minutes, then flip and cook another minute, or to your liking.
- Transfer to a plate and top with circular toast middle sections, the "hats".
- Top with goat cheese and serve!
