Slow Cooker Spicy Tomato Sauce
This is a simple yet tasty spicy tomato sauce, and very easy to prepare as you simply toss it all into the slow cooker and let it simmer for several hours. Serve with your favorite pasta or spooned over fish. Make batches and save some for later use. Of course, feel free to increase the amount of peppers to your taste, or even to add in your own chili pepper choices.
Ingredients
- 20 Roma tomatoes, peeled
- 3 jalapeno peppers, chopped
- 3 Serrano peppers, chopped
- 3 Cayenne peppers, chopped
- 2 white onions, chopped
- 3 carrots, peeled and chopped
- 18-20 large fresh basil leaves, chopped
- 2 tablespoons fresh oregano leaves
- 6 tablespoons extra virgin olive oil
Directions
- To a sauté pan, add onion and carrot with 1 tablespoon olive oil for about 5 minutes until onion is translucent
- Add peppers and sauté 1 minute
- Transfer to a slow cooker
- Add all remaining ingredients and cook minimum 4 hours over low heat
- Serve with your favorite pasta or other meal
