Sometimes all it takes to turn an average vegetable combination from good to great i s a little spice and some simple flavor additions. We took the class peas and corn combo and brought it to new life with chili pepper seasonings, lime juice, salt and cilantro. What a great mix!
Ingredients
1 cup fresh peas
1 cup fresh corn kernels
1 teaspoon fresh garlic
2 tablespoons fresh cilantro/chopped
1 teaspoon fresh lime juice
1 teaspoon chili powder
pinch of salt
dash of olive oil
Cooking Directions
Heat a large pot to medium and add the olive oil, peas and corn.
Cook about 15 minutes, stirring frequently, until the vegetables are nice and cooked through.
