Stuck for a quick breakfast but still need that spicy kick in the morning? Here's a fast one for you. It's a spicy omelet on a muffin, and pretty darned good.
Ingredients
2 large eggs
1 jalapeno pepper, minced
1/4 cup shredded Mexican cheese
1 teaspoon chili powder
1 dollop of butter
Your favorite hot sauce
1 whole wheat muffin, toasted
Salt and pepper to taste
Cooking Directions
Heat a lightly oiled pan to medium-high heat.
In a mixing bowl, scramble the eggs with jalapeno peppers and salt and pepper.
Pour the egg mixture into the hot pan and tip the pan so the egg separates out and cooks evenly.
Cook for about 2 minutes or until eggs bubble up.
Distribute the cheese over the egg and fold the egg into quarters.
