Spicy Lentil Soup
This is a Saturday afternoon favorite. Lentils do not need to be soaked so they cook up quickly and work great as a healthy meal or in-between meal, instead of loading up on junk food. You can add all sorts of meats and spices, but we’ve chosen a basic recipe for you to begin experimenting with.

Ingredients
- 16 ounces lentils (1 bag)
- 6 cups water
- 2 tablespoons chili powder
- 1 tablespoon Cajun seasoning
- 8 ounces tomato sauce
- Parmesan cheese to taste
Cooking Directions
- To a large pot, add 6 cups water and lentils. Bring to a boil, then reduce heat to medium so the water is at a very soft boil.
- Cover pot but tilt the lid to let some steam out.
- Boil the lentils about 30 minutes, or until the water is absorbed and you’ve reached your desired consistency.
- Stir in tomato sauce, chili powder, and Cajun seasonings.
- Reduce heat to low and simmer about 10 minutes to let the seasonings steep.
- Serve and sprinkle with Parmesan cheese, if desired.
NOTE: You really don’t need the Parmesan cheese, but it’s a tasty addition. It’s very good without the cheese. Also, feel free to add in more chili powder to your preference. You can easily double the amount in the recipe.
