Spicy Turkey Stew with Chili Peppers

Leftover turkey from the holidays? We always have leftovers. Part of the fun of leftovers is transforming them into something completely new. Here we offer you a spicy turkey stew, complete with jalapeno peppers and leftover turkey. Enjoy! This is a nice and hearty meal.
Ingredients
- 12-16 ounces leftover turkey meat, chopped
- 3 jalapeno peppers, chopped
- 1 small onion, chopped
- 1 celery stalk, chopped
- 2 medium carrots, chopped
- 1/2 cup peas (frozen are good)
- 2 tablespoons flour
- 2 tablespoons butter
- 2 cups chicken stock
- 1 teaspoon fresh rosemary
- 1/4 cup white wine
- 1 tablespoon chili powder
- Salt to taste
- 1 teaspoon olive oil
Cooking Directions
- Heat a large pan to medium heat and add olive oil with onions, carrots, jalapenos and celery. Cook about 5 minutes, until vegetables are softened.
- Add peas and turkey meat and stir. Cook about 5 more minutes to heat through.
- Heat a separate saucepan to medium heat and add butter. Melt butter completely and add flour. Stir to form a roux and cook about 2 minutes.
- Add white wine and cook another minute to reduce.
- Add chicken stock, rosemary and chili powder. Stir to combine.
- Heat about 5 minutes to thicken.
- Pour sauce into the turkey-vegetable mixture and cook about 3 minutes to combine.
- Serve!
