Poblano peppers are great for stuffing, as you can fit quite a lot of cheese inside, so consider the size of your poblano before preparation. We chose medium sized poblanos and were able to fit about 8 ounces of cheese inside, which will certainly fill you up.
Ingredients
1 pound ground turkey
2 Anaheim peppers, diced
1 tablespoon minced garlic
1 tablespoon olive oil
1/2 cup shredded Parmesan cheese
2 ounces cream cheese
1 teaspoon spicy mustard
Cooking Directions
To a mixing bowl add all ingredients and hand-mix thoroughly.
Divide mixture into four 4-ounce burgers.
Preheat grill to medium heat.
Grill burgers about 6-8 minutes.
Flip and cook another 2 minutes or until meat is cooked thoroughly through.
