Here's a simple salsa recipe that works perfectly as a serving bed for shellfish, like scallops or shrimp. We recently served this recipe with Proscuitto Wrapped Scallops. Delicious!
Ingredients
6 cayenne peppers
2 large jalapeno peppers, chopped
3 large Roma tomatoes, chopped
2 teaspoons fresh scallions
4 ounces chunky pineapple
4 tablespoons Italian dressing
Directions
Add all ingredients to a food processor or blender
Mix and pulse 3 or 4 times until salsa is still nice and chunky
