White Cheese and Pepperoni Omelets

This is a variation of a fun pizza omelet, with a white cheese focus - in this case, Feta and Mozzarella cheeses. We incorporate pepperoni slices for the meaty flavor, and plenty of chili pepper seasonings to draw it all together. Feel free to incorporate fresh peppers as well, though be sure to add them along with the cheeses for that garden fresh taste.
Ingredients
- 2 eggs, beaten
- 1/4 cup Mozzarella cheese
- 1/4 cup Feta cheese, crumbled
- 6 pepperoni slices, quartered
- 1 teaspoon chili powder
- Salt and pepper to taste
- Spray oil
- Hot sauce to taste
Cooking Directions
- Heat a frying pan to medium-high heat and coat lightly with spray oil.
- Spread pepperoni slices over pan and cook about 30 seconds.
- Add beaten eggs and tilt pan to even out the egg mixture. Cook 30 seconds, or until eggs begin to set.
- Add cheeses, chili powder and salt and pepper.
- Fold sides of eggs over the cheeses and flip.
- Cook about 1 minute, or until eggs are cooked through and cheeses are nicely melted.
- Serve with your favorite hot sauce!
