Cooking Directions
Here are all of the ingredients, pre-meal. For the seasonings, I chose Blair's Death Rain, a very spicy habanero powder, and also some garlic and bread crumbs. Yum!

Season the halibut as desired.

Preheat a frying pan to high heat and lightly coat with oil spray. Add the halibut and sear each side, about 2-3 minutes, or until browned. Reduce heat and simmer several minutes, or until halibut is purely white in the center and cooked through.

Meanwhile, while halibut is simmering, rinse and chop the tomatoes and sweet peppers. Also, rinse the spinach.

In a separate pan, cook the spinach leaves in light oil until limp, approximately 1 minute.

Add sweet peppers and tomatoes and cook another 2-3 minutes, until peppers are tender.

Serve spinach/sweet pepper mixture over the halibut. Delicious!
