A recipe for oustandingly delicious salmon patties made from fresh ground salmon, grilled up as salmon cakes, topped with a creamy spicy mayo.

Salmon, salmon, salmon. Following our web site here, I’m sure you already know we’re CRAZY for fresh salmon. Cray-Cray. We both love it and eat it all the time. However, thus far I’ve only prepared it a few different ways. Until now.

Like you’ve rarely seen them before. Salmon Patties! OK, I’m getting a bit dramatic here. I’m sure you’ve seen salmon patties, but these are a bit different in that we’ve served them up burger style on buns with a nice and spicy jalapeno-basil mayo.

Salmon Patties with Jalapeno-Basil Mayo (Salmon Burgers)

Salmon patties are pretty darned easy to make. Just a bit of processing with other ingredients, a good binder, some flavorful and spicy seasonings, and viola! Patties are formed. They’re great for grilling season, as they cook up nice and quick on the grill.

Let’s talk about how we make them, shall we?

Ingredients Needed

  • FOR THE SPICY MAYO
  • 1 jalapeno pepper
  • 4-5 large basil leaves chopped
  • ¼ cup mayo
  • FOR THE SALMON CAKES or SALMON PATTIES
  • 8 ounces fresh salmon
  • ½ small onion chopped
  • 1 jalapeno pepper chopped
  • 1 clove garlic chopped
  • 1 egg
  • ¼ cup panko bread crumbs
  • 2 tablespoons olive oil + more as needed
  • 1 tablespoon fresh chopped cilantro
  • 1 teaspoon Cajun seasonings
  • Salt and pepper to taste
  • 2 toasted buns for serving
  • Extra jalapenos just because!

How to Make This Salmon Patties (aka Salmon Cakes) Recipe

First, make the mayo. For the spicy mayo sauce, roast the jalapeno pepper over an open flame to char the skin. Keep flipping to get each side, about 5-6 minutes, until the skin is nicely charred. Remove and cover with a paper towel. Cool, then rub off the charred skins. Place into a food processor.

Add basil and mayo and process until smooth. Set aside.

For the salmon patties, heat a small pan to medium heat and add some oil. Add jalapeno and onion and cook about 5 minutes.

Add garlic and cook 1 more minute.

Add to a food processor.

Add the fresh salmon and process. Remove and set into a mixing bowl.

Add egg, panko, olive oil, cilantro, Cajun seasonings, and salt and black pepper. Hand mix. You can also use Old Bay seasoning. Fresh herbs and/or green onion would be welcomed here, too.

Form into 2 patties and cook in a medium-heated pan with a few splashes of olive oil. Cook about 3-4 minutes per side, or until cooked through. Or cook them on the grill! 

Set onto toasted buns and top with the jalapeno-basil mayo. Serve with extra jalapeno peppers!

BOOM! DONE! Not too hard, right? Quick and easy.

On Cooking

The choice is yours if you’d like to grill them or not. Get those grill marks, yo! Make it look pretty.

Or pan sear them like I did. You can also bake them – baked salmon patties are always good, too. Bake them at 375 degrees F for 10-12 minutes, or until the salmon cakes are cooked through.

Either way, all good. You might have questions about the consistency, but they have a nice mouth feel with plenty of bite. I like to call that “heft”.

Not like steak, but still, substantial. With the onion and the jalapeno and garlic and the panko, these salmon patties are a new favorite. Do NOT forget the extra roasted jalapeno peppers for the topping.

Why? Because roasted jalapeno peppers! Because I’m crazy like that. Yum.

What to Serve with Salmon Patties

I like to serve mine with lemon wedges. They’re delicious with a nice pop of lemon juice or lemon zest squeezed over the top. As a side or even an extra topper, try my spicy coleslaw recipe.
