A recipe for oustandingly delicious patties made from ground salmon, grilled up as salmon burgers, topped with a creamy spicy mayo.

Salmon, salmon, salmon. Following our web site here, I’m sure you already know we’re CRAZY for salmon. Cray-Cray. We both love it and eat it all the time. However, thus far I’ve only prepared it a few different ways. Until now.

Like you’ve rarely seen them before. Salmon Patties! OK, I’m getting a bit dramatic here. I’m sure you’ve seen salmon patties, but these are a bit different in that we’ve served them up burger style on buns with a nice and spicy jalapeno-basil mayo.

Salmon patties are pretty darned easy to make. Just a bit of processing with other ingredients, a good binder, some flavorful and spicy seasonings, and viola! Patties are formed. They’re great for grilling season, as they cook up nice and quick on the grill.

Get those grill marks, yo! Make it look pretty.

Or pan sear them like I did. Either way, all good. You might have questions about the consistency, but they have a nice mouth feel with plenty of bite. I like to call that “heft”.

Not like steak, but still, substantial. With the onion and the jalapeno and garlic and the panko, these salmon patties are a new favorite. Do NOT forget the extra roasted jalapeno peppers for the topping.

Why? Because roasted jalapeno peppers! Because I’m crazy like that. Yum.

I absolutely love salmon patties. It’s such a unique way to treat a fish that is so good on its own. Adding these types of flavors takes it up a notch. The jalapeno-basil mayo adds even another level of deliciousness.

  • 1 jalapeno pepper
  • 4-5 large basil leaves chopped
  • ¼ cup mayo
  • 8 ounces salmon
  • ½ small onion chopped
  • 1 jalapeno pepper chopped
  • 1 clove garlic chopped
  • 1 egg
  • ¼ cup panko bread crumbs
  • 2 tablespoons olive oil + more as needed
  • 1 tablespoon fresh chopped cilantro
  • 1 teaspoon Cajun seasonings
  • Salt and pepper to taste
  • 2 toasted buns for serving
  • Extra jalapenos just because!
  1. For the mayo, roast the jalapeno pepper over an open flame to char the skin. Keep flipping to get each side, about 5-6 minutes, until the skin is nicely charred. Remove and cover with a paper towel. Cool, then rub off the charred skins. Place into a foodprocessor.
  2. Add basil and mayo and process until smooth. Set aside.
  3. For the salmon patties, heat a small pan to medium heat and add some oil. Add jalapeno and onion and cook about 5 minutes.
  4. Add garlic and cook 1 more minute.
  5. Add to a food processor.
  6. Add raw salmon and process. Remove and set into a mixing bowl.
  7. Add egg, panko, olive oil, cilantro, Cajun seasonings, and salt and pepper. Hand mix.
  8. Form into 2 patties and cook in a medium-heated pan with a few splashes of olive oil. Cook about 5 minutes per side, or until cooked through.
  9. Set onto toasted buns and top with the jalapeno-basil mayo. Serve with extra jalapeno peppers!
