Looking for stuffed pepper recipes? These gorgeous bell peppers are stuffed with artichokes, chicken, chickpeas, black olives, feta cheese and more, then baked to awesomeness.

Patty and I spent time in the Mediterranean a few years ago and truly loved the food. It was a two-week cruise. We started off first with a week in Italy, then hopped on the ship and hit a number of spots, including Croatia, more Italy, Greece, France, and Turkey.

While the food was different everywhere, so awesome for us foodies, there was an underlying healthy quality to it. No fast food! We noticed smaller portions, no processed foods, homemade feel everywhere we ate. So much better for you, really.

Mediterranean Style Stuffed Peppers

Remind me to tell you about the homemade meal in Turkey. Best. Meal Ever. The whole family agreed. Uber-Turkey.

I also love the combination of some of the ingredients. We’re talking chickpeas that take on a creamy quality when cooked long enough, marinated artichoke hearts with a flavor unlike anything else, and feta cheese!

We definitely love feta cheese! We buy the large feta container at the local Costco and go through it pretty fast.

Like most everything, I decided to turn some of these ingredients into a stuffed chili pepper recipe.

As you already know, I’m a stuffed pepper maniac. I mean, Stuffed Chili Peppers Cookbook! I know, I know. The obsession continues. I wasn’t sure exactly how good this one would turn out, but I had a good idea, considering the ingredients and the chosen seasonings.

Let’s talk about how we make them, shall we?

How to Make These Mediterranean Stuffed Peppers – the Recipe Method

First, mix together your cubed chicken with herbs de provence, cumin, olive oil, chili powder and salt and pepper.

Cook up the chicken in a lightly oiled pan until it is cooked through, about 5-6 minutes, then add it back to the mixing bowl.

Add in some chickpeas, olives, artichoke hearts, feta cheese and basil leaves. Add lemon zest to your preference.

Next, slice the bell peppers in half lengthwise and scoop out the insides.

Heat an oven to 400 degrees and bake the unstuffed peppers for 10 minutes to soften them up a bit.

Remove the peppers from the oven and stuff them with your stuffing mixture.

Return to the oven and bake an additional 30 minutes.

Garnish with parsley and serve!

A lot goes into this dish, but a lot more comes out in terms of flavor.

Ingredients
  • 10 ounces chicken breast cubed
  • 1 teaspoon herbs de provence
  • ½ teaspoon ground cumin
  • 1 teaspoon spicy chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can chickpeas drained
  • 6 ounces black olives
  • 8 ounces marinated artichoke hearts chopped
  • ½ cup crumbled feta cheese
  • 6 basil leaves torn
  • Lemon zest to taste
  • 4-6 red bell peppers
  • Chopped parsley for garnish
Instructions
  1. In a mixing bowl, toss cubed chicken with herbs de provence, cumin, olive oil, chili powder and salt and pepper.
  2. Heat a large pan to medium heat and add chicken. Cook about 5-6 minutes, or until the chicken is cooked through. Add back to the mixing bowl.
  3. To the mixing bowl, add chickpeas, olives, artichoke hearts, feta cheese and basil leaves. Add lemon zest to your preference.
