Chicken Tortilla Soup

First cook down the onions, peppers, and garlic in a large pot.

Then add the seasonings, chicken, black beans, corn, tomatoes, and chicken broth. Bring to a boil, then reduce the heat and simmer to cook the chicken through.

Carefully remove the chicken to a large bowl and shred it with a couple forks.

Add the chicken to the pot and simmer to warm it through.

Add oil to a separate wide pot or pan to medium heat. Add the tortilla strips and lightly fry them a few minutes per side, until they become a golden brown. Flip to fry both sides. Remove the fried tortilla strips and set them onto paper towels to drain. Lightly salt them.

Serve the soup into bowls and top with your crispy homemade tortilla strips and other favorite toppings. I like fresh cilantro and lime juice. Boom, done!
