- 1 tablespoon olive oil (or use lard, which is more traditional)
- ½ small onion chopped
- 1 jalapeno pepper chopped
- 1 clove garlic chopped
- 1/2 teaspoon chili powder
- ¼ teaspoon ground cumin (if desired, not traditional, but tasty)
- Salt to taste I use about ¼ teaspoon
- 1.5 cups cooked pinto beans drained, if using canned
- 1/4 cup water
- 1 teaspoon lime juice
- 1 tablespoon hot sauce or more, if desired – chipotle in adobo is a great option as well, or use homemade ranchero sauce
Heat the oil in a large pan and add the onion and jalapeno peppers. Cook them down for 5 minutes to soften.
Add the garlic, chili powder, cumin and salt. Cook another minute.
Add the beans and water. Give it a stir and cover. Cook for 5 minutes.
Mash the beans with a fork or a potato masher to your desired consistency. Remove from heat.
Stir in the lime juice and hot sauce, if desired.
