Ingredients

  • 1 tablespoon olive oil (or use lard, which is more traditional)
  • ½ small onion chopped
  • 1 jalapeno pepper chopped
  • 1 clove garlic chopped
  • 1/2 teaspoon chili powder
  • ¼ teaspoon ground cumin (if desired, not traditional, but tasty)
  • Salt to taste I use about ¼ teaspoon
  • 1.5 cups cooked pinto beans drained, if using canned
  • 1/4 cup water
  • 1 teaspoon lime juice
  • 1 tablespoon hot sauce or more, if desired – chipotle in adobo is a great option as well, or use homemade ranchero sauce

Instructions

  • Heat the oil in a large pan and add the onion and jalapeno peppers. Cook them down for 5 minutes to soften.
  • Add the garlic, chili powder, cumin and salt. Cook another minute.
  • Add the beans and water. Give it a stir and cover. Cook for 5 minutes.
  • Mash the beans with a fork or a potato masher to your desired consistency. Remove from heat.
  • Stir in the lime juice and hot sauce, if desired.
