Spicy Pork Noodle Bowl - Recipe

- 2 tablespoons rice wine vinegar
- ¼ cup soy sauce
- 3 tablespoons brown sugar
- 3 tablespoons lime juice + more for serving
- 3 tablespoons fish sauce
- 2 tablespoons chopped cilantro + more for serving
- 2 cloves garlic minced
- 8 ounces rice noodles sub in spaghetti noodles if you can't find rice noodles
- 1 tablespoon spicy chili oil
- 2 jalapeno peppers sliced
- 1 cups cooked pulled pork
- Chopped green onion for serving
Whisk the first 7 ingredients together in a mixing bowl and set aside until ready to use.
Heat a large pot of water to boil, then remove from heat. Add rice noodles and let sit for 10 minutes to soften.
While noodles are cooking, heat a wok to medium heat and add chili oil.
Add jalapeno peppers and cook about 4-5 minutes to soften.
Add pulled pork and stir until warmed.
Drain noodles and add them to the wok with your reserved sauce. Toss and cook for 2 minutes, stirring.
Serve into 2 bowls and top with cilantro, green onion and a few more squeezes of lime juice.
