Homemade Hummus-Avocado Toast

- 1 can garbanzo beans chickpeas – 15 ounces, drained
- 2 tablespoons tahini
- Just from 1/2 a lemon
- 1 clove garlic chopped (or more to your preference)
- ¼ cup crumbled feta cheese or more to your preference
- 2 tablespoons fresh chopped parsley
- 1 teaspoon spicy chili powder – go WILD here depending on your preferred spice level – try some habanero powder, or go softer with Aleppo or cayenne
- ½ teaspoon ground cumin
- ¼ cup olive oil
- 1 ripe avocado sliced in half
- 10 large Italian bread slices toasted
- Chopped parsley for sprinkling
To a food processor, add chickpeas, tahini, garlic, parsley, chili powder and feta cheese. Pulse to combine. It should become grainy.
Add lemon juice and process.
Add olive oil in a steady stream while processing, until it smooths out. I personally like to reduce the amount of oil and keep just a bit lumpy. I like how it spreads that way.
Set your toasts onto a dish and scoop some of the avocado onto each. Smash it in good.
Spread some of the hummus over the avocado, sprinkle with parsley and serve.
