Aji Picante Sauce Recipe

A mildly spicy aji picante sauce recipe made with aji peppers picked straight from the garden. Serve it as a sauce or a salsa. Delicious!

Ingredients

  • 2 large tomatoes stemmed and chopped
  • 8 ounces Aji peppers about 25 or so, chopped – I used Aji Pineapples and Aji Fantasy peppers
  • 1 small onion chopped
  • 4 garlic cloves chopped
  • 3 tablespoons cilantro
  • 1 tablespoon cayenne powder
  • 1 teaspoon ground cumin
  • 1/3 cup water
  • 1/3 cup cider vinegar
  • Juice from 1 small lime
  • Salt and pepper to taste

Instructions

  • To a food processor, add tomatoes, Ajis, onion and garlic. Process to roughly chop.
  • Add remaining ingredients and process until smooth.
  • Add the sauce to a large pot and bring to a boil. Reduce heat and simmer for 15 minutes.
  • Cool and store in the fridge at least a couple days for theflavors to develop.
  • Serve and enjoy!
