Shrimp Tacos Recipe with Fresh Mango-Avocado Salsa

This shrimp tacos recipe takes succulent shrimp and smothers them in a quick and easy homemade mango-avocado salsa for a light but satisfying easy dinner.

Ingredients

FOR THE SALSA

  • 1 medium avocado pitted and peeled
  • 1 medium mango peeled and cored
  • 1 small Roma tomato
  • 2 jalapeno peppers
  • 3 tablespoons freshly chopped cilantro
  • Juice from 2 limes
  • Salt to taste

FOR THE SHRIMP TACOS

  • 1 pound large shrimp
  • 3 tablespoons olive oil
  • ½ teaspoon cumin
  • 2 teaspoons taco or Cajun seasonings (Use 1 teaspoon for a milder version)
  • 1 teaspoon garlic powder
  • 10 corn tortillas or more as needed, warmed
  • Your favorite hot sauce

Instructions

  • Prepare the salsa first by dicing the avocado, mango, tomato and jalapeno peppers. Set them into a large mixing bowl.
  • Add cilantro and lime juice. Stir. Adjust for salt and cover. Refrigerate about an hour to allow flavors to mingle.
  • Set the shrimp into a large mixing bowl. Toss with olive oil.
  • Add cumin, seasonings, garlic powder and salt to taste. Toss and cover. Refrigerate one hour.
  • Heat a pan to medium heat. Add in marinated shrimp and cook about 3-4 minutes per side, or until cooked through. Alternatively, cook them on the grill 3-4 minutes per side. Get outside and grill!
  • Serve onto warmed tortillas topped with your mango-avocado salsa.
  • Top with your favorite hot sauce!

Notes

  • The Shrimp. I like to grill the shrimp for maximum flavor, but you can very easily saute it on the stove top. I prefer using raw shrimp that I can peel and devein myself. You can certainly buy frozen shrimp for this recipe, though raw is preferred. If you're using precooked frozen shrimp, thaw it first then gently reheat it on the grill or the stove top with a bit of seasoning.
  • The Seasonings. I use either a homemade taco seasoning or a homemade Cajun seasoning blend along with some cumin for this recipe. It's a good way to get nice and spicy shrimp. You can use your favorite store bought blends, or incorporate other seasonings, such as spicy chili flakes, chili powder, extra garlic powder, onion powder, and more. Go with your favorites!
  • Best Tortillas for Shrimp Tacos. Corn or flour tortillas? Dang, it's so hard to choose! I lean toward warmed, lightly charred corn tortillas for my shrimp tacos, but warmed flour tortillas are delicious, too. The choice is yours!
