Mediterranean Style Stuffed Peppers - Recipe

Ingredients

  • 10 ounces chicken breast cubed
  • 1 teaspoon herbs de provence
  • ½ teaspoon ground cumin
  • 1 teaspoon spicy chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can chickpeas drained
  • 6 ounces black olives
  • 8 ounces marinated artichoke hearts chopped
  • ½ cup crumbled feta cheese
  • 6 basil leaves torn
  • Lemon zest to taste
  • 4-6 red bell peppers
  • Chopped parsley for garnish

Instructions

  • In a mixing bowl, toss cubed chicken with herbs de provence, cumin, olive oil, chili powder and salt and pepper.
  • Heat a large pan to medium heat and add chicken. Cook about 5-6 minutes, or until the chicken is cooked through. Add back to the mixing bowl.
  • To the mixing bowl, add chickpeas, olives, artichoke hearts, feta cheese and basil leaves. Add lemon zest to your preference.
  • Slice the bell peppers in half lengthwise and scoop out the insides.
  • Heat an oven to 400 degrees and bake the unstuffed peppers for 10 minutes to soften.
  • Remove from heat and stuff each with your stuffing mixture.
  • Return to the oven and bake an additional 30 minutes.
  • Garnish with parsley and serve!
