Ingredients

  • 3 cups chopped strawberries
  • 4 serrano peppers diced
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Instructions

  • Add all of the ingredients to a large pot. Heat to a simmer and cook about 10 minutes, or until the fruits soften and begin to break down.
  • Cool then process in a blender or food processor until smooth.
  • Spread the mixture over dehydrator sheets (not directly on the mesh) to ¼ inch thickness. It is best to use a spoon to spread it evenly, or slap the trays a bit down onto a counter to let the mixture spread. Use about 1 cup per sheet.
  • Dehydrate at 130°F for 6-8 hours, or until the leather peels away from the tray easily. You might need to use a knife to get along the edges, as it will be tacky, but it should not stick too much.
  • Flip the spicy leather and continue dehydrating another 2 hours, or until it is completely dry and there aren’t any moist spots left.
  • Cool it down a bit, then roll it up. You can enjoy your fruit leather now, or wrap in plastic wrap and store in a cool, dry place. Keeps for 6 months or longer.

Notes

Makes 3 large leathers that you can slice and divide as desired.
