Aji Amarillo Paste Recipe

Aji Amarillo Paste is widely used in Peruvian cooking. You can buy Aji Amarillo Paste commercially, but here is a recipe to make it at home with fresh Aji Amarillo chili peppers.

Ingredients

  • 2 aji amarillo peppers chopped
  • 1 tablespoon chopped onion
  • 1 garlic clove chopped
  • Pinch of salt
  • 1 tablespoon olive oil (or more as desired)

Instructions

  • Add all of the ingredients to a food processor and process until nice a thick paste forms. Add more oil while the processor is running to achieve a smoother paste.
  • Adjust for salt and pepper and serve!

Notes

Heat Factor: Medium. You'll get some decent level heat with aji amarillo peppers, about the same heat as a serrano pepper.
This will last a week in the refrigerator in a sealed container.
