Cajun Dirty Rice Recipe

This dirty rice recipe is classic southern cuisine with Cajun style white rice made "dirty" from bits of chicken, beef or pork, so easy to make.

Ingredients

  • 1 tablespoon olive oil
  • 1 green bell pepper chopped (or use jalapenos for a spicier version, or serranos for even spicier)
  • 1 medium onion chopped
  • 1 rib celery chopped
  • 3 cloves garlic chopped
  • 10 ounces ground pork or ground beef
  • ½ cup chicken livers finely chopped (or more as desired) - OPTIONAL
  • 1.5 cups white rice uncooked (12 ounces)
  • 3 cups chicken broth
  • 2 tablespoon Cajun seasoning blend
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh chopped herbs for garnish

Instructions

  • Heat the olive oil in a large skillet or pan (or a pot) to medium heat.
  • Add the peppers, onion and celery. Cook them down about 5 minutes to soften.
  • Add the ground pork and break apart with a wooden spoon. Cook about 5 minutes to brown, stirring here and there.
  • Add the chicken livers (if using) and stir them in. Cook them down for 5 minutes.
  • Add the rice, chicken broth, Cajun seasonings, bay leaf and dried thyme. Sprinkle in salt and pepper to taste.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the rice is cooked through. Remove the bay leaf.
  • Garnish with fresh chopped herbs and serve.
