Mashed Sweet Potatoes Recipe with Chipotle

This is my favorite creamy mashed sweet potatoes recipe with spicy chipotle, perfect for the holiday table or for anyone who loves sweet potatoes.

Ingredients

  • 2 large sweet potatoes about 2 pounds
  • 2 tablespoons butter
  • 3.5 ounces chipotles in adobo 1/2 a can – save the rest
  • 2-4 tablespoons crema or sour cream depending on how creamy you want them
  • 1 tablespoon garlic powder
  • Salt and pepper to taste

Instructions

  • Peel and rinse the sweet potatoes, then chop them into small cubes.
  • Set them into a pot and cover them with water. Add a teaspoon of salt. Boil the sweet potatoes until they are fork tender, about 10 minutes. Drain.
  • Add the sweet potatoes to a large bowl and add the butter, chipotles in adobo, crema or sour cream, garlic powder, and salt and pepper to taste.
  • Mash the mixture with a potato masher or large fork to mash the potatoes, or use a hand mixer for smoother mashed potatoes.
  • Serve!

Notes

NOTE: Serves 4-6 people.
I like to drizzle mine with a bit of olive oil and spicy chili flakes.
Heat Factor: Medium. You’ll get some good zing from the chipotles in adobo. For milder mashed sweet potatoes, cut the chipotles in adobo in half. For spicier, incorporate a spicy chili powder to the mix, like cayenne pepper.
You can easily double this recipe by doubling all of the ingredients.
