- 10 jalapeno peppers
- 1 tablespoon olive oil
- 1 extra small jalapeno pepper chopped
- 1 medium onion chopped
- 3 garlic cloves chopped
- 12 ounces ground beef
- 1 cup shredded cheddar cheese
- 10 slices bacon or 20, depending on your preference
Slice the jalapeno peppers in half lengthwise and scoop out the insides. Set them onto a baking sheet.
Heat a large pan to medium heat and heat olive oil. Add chopped jalapeno and onion. Cook about 5 minutes to soften.
Add garlic and cook another minute until fragrant.
Add ground beef and cook through, about 6-7 minutes. Remove from heat and cool slightly.
Swirl in cheddar cheese and mix to incorporate.
Stuff each jalapeno pepper with cheese beef mixture.
Slice the bacon on half lengthwise and wrap each stuffed pepper. If you want more bacon, use a whole slice of bacon for each popper half.
Set oven to broil and set the poppers into the center of the oven, not too close to the heat. Broil the poppers 15 minutes, or until bacon is crisp.
Remove from heat and serve!
